
Ulu (Breadfruit) Chowder
Delicious Vegan Chowder with Ulu and Coconut Milk

Ingredients
- 2 tbsp extra virginia olive oil
- 1/2 white onion
- 2 garlic cloves
- 1 tsp yellow curry powder
- 2 cups precooked cubed 'ulu (Hawaiian Breadfruit)
- 1/2 tsp ground coriander
- 3 kafir lime leaves
- 2 cans coconut milk
- 1/2 cup water
- sea salt to taste
Instructions

Prepare 'ulu ahead of time. Peel 'ulu using a large knife and discard skin, remove seed, cut in large cubes, and boil until slightly soft. The 'ulu will cook further when added to the chowder. Cool and cut in bite sizes pieces.

Heat oil in a skillet on medium heat and add coriander and kaffir lime leaves. Saute until fragrant.

Add onions and garlic and saute until almost tender

Turn up heat to high and add yellow curry pounder, corn, coconut milk, and 'ulu

Bring to boil, then turn down and let simmer on medium low until sauce begins to thicken and 'ulu is tender

Add more water if sauce thickens too much. Add salt to taste and serve.
