We are spending the weekend away with family on Oahu. Our son is taking care of the farm. Couldn’t help myself but had to make some guava jelly while we are here. Isn’t that what everyone does on vacation. I brought some jars with me because last time we were here I couldn’t find canning jars anywhere. We must’ve gone to four stores before someone found an old case all dusty on some back shelf somewhere. Then store clerk asked what I was going to do with the jars. She looked at me like I was from another planet when I told her I was going to make jelly!!
My mother in law has this old guava tree that came from a plant from the University of Manoa a long time ago. The guavas are really large and super sweet. I don’t have to pick very many to make a few jars. The nice thing about guava is that it contains a lot of pectin, so you don’t need to add any extra. This is good because if you think it was hard to find jars on Oahu, it is even harder to find pectin. Even away from home, I can’t help but make jelly, especially if I see fruit falling on the ground. The good thing is that they’re not totally wasted when I’m not there, there are plenty of chickens around who enjoy them just as much as I do!
