One of my favorite things to grow in the garden is butternut squash. It’s very versatile to cook with, and best of all it’s pretty bug resistant compared to other squash we’ve tried to grow. Our vine isn’t huge but it’s a loaded with squash. So I’ve been looking at different recipes, and tonight I’m making a spinach butternut squash lasagna. I added asparagus from the garden for extra measure. It has a cream sauce as opposed to a tomato sauce, crossing my fingers it comes out good .
Today was a lazy day on the farm. David went fishing and crabbing. I know he caught a nice sized ono because he sent me a picture, but I’m waiting to see what else he is going to come home with. I on the other hand got caught up on some reading and some sunbathing. It was really beautiful today. After three weeks of rain it was nice to have a warm sunny day.
